Prepare the Pistachio Filling:
In a medium bowl, combine the finely chopped pistachios, granulated sugar, ground cinnamon, and walnuts if using. Mix well and set aside.
Prepare the Phyllo Dough:
Preheat your oven to 350°F (175°C). Grease a large baking sheet or line it with parchment paper.
Place one sheet of phyllo dough on a clean surface and lightly brush it with melted butter. Place another sheet of phyllo dough on top and brush with more butter. Repeat this process until you have 6-8 layers of phyllo dough.
