The end. • For the carrots: 2 1/2 melted unsalted butter, divided 1 tbsp olive oil 2 clove garlic, minced and divided 1/2 tsp salt 1/2 tsp paprika 1/2 tsp cumin 2 lbs carrots, peeled 2 tbsp honey • For the cream: 1/2 cup whipped cream cheese 1/4 cup chopped scallions 1 clove garlic • For the toppings: Walnuts Parsley • 1️⃣Preheat the oven to 425. 2️⃣Make the butter. Add 2 tbsp butter, the oil, one clove of garlic, salt, paprika and cumin to a small bowl and mix to combine. 3️⃣Add the carrots to a large casserole dish, add the butter and toss to coat. Place in the oven for 25 minutes. 4️⃣While the carrots roast, make the honey glaze. Add the remaining melted butter, remaining garlic and the honey to a small bowl and mix. 5️⃣Next, remove the carrots from the oven, add the honey mixture and toss again. Place the carrots back in the oven for 10-15 minutes. The carrots should be tender. After they are done, place the dish under the broiler for 5 minutes or more to brown the tops. 6️⃣While the carrots roast, make the scallion cream. Add the cream cheese, scallions and garlic to a bowl and whisk to combine. 7️⃣Spread the cream onto a plate, top with the carrots, then add the parsley and walnuts.
