Indulge in a taste of the Mediterranean with this delicious fish recipe. 🐟 Elevate your next dinner party, or make this for your family during a cozy night at home! 🍽️ Ingredients: • 2 Tbsp olive oil • 1 cup potatoes, diced • 1 cup red bell peppers, thinly sliced • Sea salt & pepper, to taste • 3 cloves garlic, peeled & diced • 8 pitted Kalamata olives, chopped • 2 cups plum tomatoes, seeded & cut into 1/4-inch wedges • 2 Tbsp lemon juice • 2, 6-oz cod or halibut fillets 👨🍳 Directions: • Heat oven to 400°F. • Grease a 2-quart casserole dish with 1 Tbsp olive oil. Spread potatoes and peppers over bottom and season with salt and pepper. Bake 25-35 minutes, or until potatoes are tender. • Scatter garlic over potatoes and peppers. Season fish with salt and pepper and place over potatoes.
