While tomatoes on toast are nothing new, I have never made one with butter. I usually go the olive oil route and drizzle the bread and the tomatoes with good olive oil. But I tried it with butter and it was delicious. I felt like it was crying out for a fresh herb even though Matt thinks it’s perfect as it. I used dill but basil, tarragon or chives would also be amazing. Even a sprinkling of my rosemary salt would elevate this. She had so many iconic recipes that she was famous for and these beans are one of them. It’s wild to think you can turn the most humble ingredients into something this delicious. The lady was also selling these salads although I don’t usually love a noodle salad, I agreed to try it. Thank god I did as it was delicious. The udon noodles were silky and the arugula peppery. It was an unlikely combination that worked to perfection. I have since made this salad 3x since I first had it and I show no signs of stopping.
