Ingredients:
1 cup avocado oil
1 egg
1 Tbsp Dijon mustard
1 Tbsp apple cider vinegar
2 tsp lemon juice
1/4 tsp salt
Directions:
Add the avocado oil to a pint size jar. Add in the remaining ingredients except the egg.
Once all the ingredients are in the jar, carefully crack and add the egg.
Using an immersion blender, hold to over the egg and blend until it becomes creamy. Slowly move the immersion blender up and down - blend the ingredients until it becomes mayo.
Store in the refrigerator for up to 2 weeks.
Helpful tip - use an egg that’s been refrigerated. I’ve tried doing this with fresh farm eggs that have not been refrigerated yet and it has never set up for me. Make sure your egg is cold.
