Inspired by the wonderful @madeleinesmeals 🫶🏼 For 2-3 people 1 onion, finely sliced 3 cloves garlic, finely chopped 1 thumb sized piece of ginger, grated 50g white miso paste 3 tbsp soy sauce 1 litre veg stock 200g spinach 2 bok choy, sliced in half 2 handful coriander, roughly torn 100g or 2 nests of rice vermicelli noodles 2 spring onions, finely chopped Chilli oil 1.
