👉 Ingredients
4 eggs
2 tbsp unsalted butter
Half cup cherry tomatoes cut in half or thinly slice regular tomatoes
1-2 large Jalapeño
1/2 cup spinach
Salt to taste
Sesame seeds
1 tbsp black pepper
1 tbsp cajun seasoning
Mexican four cheese/ mozzarella cheese for garnish.
Method:
In a skillet on medium heat add butter, once melted add tomatoes, spinach and jalapeños, add cajun seasoning and salt.
Make four wells in the skillet and crack the eggs into them. Top with shredded cheese, salt, pepper and cover the skillet again. Lower the temperature to low heat and cook for 6 to 8
